Patacones w/ Veggie Sautee
(Serves 4-6)
Ingredients:
4 Large Green Plantains
2 Large Roma Tomatoes
2 Cups Fresh Basil
1 Large Onion
2 Cloves Garlic
1 Large Tomato
Olive Oil
Chop garlic, tomato and onion and sauté (season to taste)
Peel plantains and half them then fry for 3 minutes on each side
Cover fried plantain with foil or parchment paper and flatten
Heat oil to a sizzle and carefully place flattened plantains into and deep-fry on each side until golden brown
Lay patacones on paper towel and salt to taste
Serve fried plantains on large plate with the sauté on the side and plate the basil and tomatoes so topping can be added to taste.
